Chitosan is a kind of valuable natural polymer material that received intensive attention in recent years.This paper reviewed the development of the application of chitosan membrane on food preservation. The methods of making chitosan membrane were summarized.Both the properties of chitosan membrane and its preservation effects on the fruits and vegetables were discussed in details.The result indicated that it has great potential to apply chitosan to food preservation.
